Background:

In the following analysis, I will be mainly focusing about the hospitals and clinics in order to narrow down the scope. The health care industry has already been lasting for years, it mainly aims at curing patients. In Hong Kong, there are mainly two different sectors of this industry, the public sector(Hospital Authority) which is a semi-governmental organization, and the other one is the private sector, usually clinics or hospitals operated by one, or several doctors.

Challenges:

Safety

As Hong Kong is having an aging population, the major growth segment of the patients in hospitals are the senior citizen. Unlike the others, most of the seniors cannot be fed with solid food since they may choke and resulted in death. Therefore, most of the meals which are served to senior citizens are usually grind into moisturized mixture to prevent causing any accidents. Apart from the form of the food, the way that how the nurses feed them is also one of the most important key points. Accidents happened due to the nurse feeding the aged patient too fast.




Limited choice of food

Usually when a person is lack of some kinds of nutrients, he will be weak and end up getting sick. For the patients who are staying in hospitals, nutrients are extremely important for them for recovery purpose. The Hospital Authority has been facing this problem for years. Due to the huge demand, the food that hospitals provide cannot be something fancy and there are only few choices on the menus.


Trend:

Limited choice of food

As mentioned as one of the challenges in the above paragraph, hospitals tends to not providing too many choices of food to the patients. And actually this provides a lot of advantages to the hospitals which have this practice. This strategy makes demand forecasting easier since there is not much variety of food choices. Also, limited choices allows mass production and makes the process flow smoother.



Extra nutritional value in menu planning

Unlike from the past, menus in hospitals nowadays are designed by nutritionists in order to maximize the nutritional value of the food provided to patients while not sacrificing too much tastiness.

Conclusion:

We are always being taught that when we are solving operational problems, we should not only focus on the software side or hardware side, but both of them. In this Health Care industry, service quality delivered by nurses would be the software side and the menu engineering of hospitals would be the hardware part. The government should invest in more resources of keeping the nurses due to the overwhelming workload. Besides, they can focus on more about the menu engineering since usually patients usually are not in a mood of eating when they are sick.

Q2b) Challenges and recent trends on Schools

The primary service of schools is to provide education through teaching knowledge, skills, and delivering positive and decent values of judgement. There are commonly three types of schools, which are primary schools, secondary schools as well as colleges and universities. 

Other than education, schools have to offer food services to students, especially for primary and secondary schools. The following would mention the related challenges and trends on schools' managed services of food service operations.

Challenges


1. Retaining BOTH guest and client's satisfaction

Nowadays, the society has been increasingly aware of food safety and nutrition values of food. Typically in primary and secondary schools, many students would join some kind of School Lunch Program, where the schools would provide them a set of meals everyday. Guests, the students, prefer tasty food with higher food varieties. However, parents care more about what kinds of food are included in the lunchbox, like whether there are any junk food (food safety) or low nutrition valued food. They worry the lunchbox would adversely affect their children's health and puberty development.

For instance, World Health Organization (WHO) reported that eating sausage and bacon could be causes of suffering from cancer, which have classified as carcinogenic to humans (Group 1, which is same group of tobacco smoking) (WHO, Oct 2015). Schools have to face these contingency issues/ news and take immediate actions if the contracted food service providers offer such kind of food.













2. Demand for high diversity of food

There are wide food varieties today, such as Korean, Japanese, Hong Kong style, etc. Schools have to investigate children's eating habits and preferences so as to ensure they are satisfied with the food. Meanwhile, schools have to be aware of the nutrition values of those food before implementation.

3. Demand for customized food

Other than food safety and nutrition concerns, customized food with good quality is also crucial. In primary schools, all of the students are relatively small-aged. Thus, schools have to ensure food providers will cut the food into smaller pieces, preferably boneless food. As a result, children would not choke on a fish bone or food in huge size.

4. School enrollment

In recent decade, declining enrollment is a concern for education industry. According to HKSAR Education Bureau, the Pupil-Teacher Ratio in primary school have declined from around 16 to 1, to around 14 to 1 between 2009 and 2015. Therefore, it is reasonable the demand for school's managed food and beverage service would definitely decrease.

Trends


1. Contract management (Walk, 2010)

In regard to college and university students' fast pace life style, there is a trend that tertiary campuses sign contracts with branded, quick-service restaurants, such as chain restaurants like McDonald's, Starbucks Coffee, and Subway. For instance, there are McDonald's, Starbucks Coffee shop, and Maxim's in Hong Kong University of Science and Technology.

The well-known brand effect could attract more customers, which is beneficial to both the restaurants and the university. Moreover, take-away services could provide convenience to university staff and students. It could stimulate their expenditure during dining time (lunch and dinner), before and after some student events. In short, the university can maximize their sales revenue by capturing these captive clientele.

In addition, the university can benefit a lot from contract management. It's because those food service providers possess their expertise in size and types of operations. The university can leverage their abundant resources and support so as to provide exceptional food services to students.
















2. Increase in use of food-service carts at vantage points

Food-service carts have total flexibility in geographic mobility. Once the vantage points change, even frequently, the carts can move to the new vantage point so as to capture more customers and maximize their sales revenue.

For example, there is a coffee cart outside the lecture theater no. 17 in the Academic Building 1 at the City Univerisity of Hong Kong.






















Evaluation & Conclusion

In this era of age, food safety  and health concern are of the essence. In July 2014, it was found that McDonald's China did not perform proper food processing and raised the public's attention. To prevent any food scandal, food safety is an essential element in schools' F&B managed services. Moreover, the food services at HKUST and CityU have demonstrated the trend of contract management and food-service carts at vantage points.

All in all, there are various challenges and concerns in terms of nutrition, food quality and safety. Meanwhile, contract management (or outsourcing) of food services can bring numerous benefits to the university. There is a trend of using food-service carts at vantage points as well.

Q2a) Challenges and Recent Trends on Airlines & Airport


Challenges on Airlines

Time-sensitiveness in food preparation. A typical airline caterer delivers over 45,000 meal trays per day. For these items to be supplied to the airlines, the caterer has to organize the operations in a way that everything is delivered and served on time given the strict schedules of airlines. Any delay in adhering to flight schedules will be costly to the airline due to the heavy penalties attached to flights that fail to meet the schedule.


Storing food in safe temperatures. Unlike regular restaurants, in-flight meals are to be consumed thousands of feet above the ground. Hence, it is a challenge to store the meals in its appropriate temperature, especially for the perishable dishes or cold plates such as fruits and salad. Failure to properly store food may lead to food safety issues.

Difficulty in guaranteeing food quality. As food is to be re-heated before serving, their outlook may vary from when they were freshly prepared. For example, some green vegetables may turn yellow after being re-heated, or the meat and rice may appear to be very dry and lack of moisture, which would look unattractive and unappealing. Besides, the food may also taste blend and without much flavor after reheating as compared to freshly consumed, which may affect the guests’ perception of food quality.

Difficulty in ensuring good hygiene. Unlike how meals are promptly served in restaurants, there tends to be long hours between preparation and when the food is actually served. Hence, it is a challenge to maintain good hygiene during the lead time when food is to be waited for hours before serving.
Challenges on Airport
Logistical challenges. Due to the remote location of airport restaurants, logistical challenges in food delivery is common as compared to restaurants in the city-center which is able to conveniently import food ingredients.

Limited storage area. As airport restaurants are usually small in size, storage for food ingredients is limited. Therefore, a precise forecast of demand is needed in order to avoid shortage of food ingredients.
Restrictions on disposal arrangements. Unlike regular restaurants with proper catering facilities, the wash-up area in which all the airline and kitchen equipment are washed is quite limited in size. Hence, there is not much space for clean up or sewage arrangements.

Recent trends
Preparing meals beforehand. As air travelled increased, cooking can no longer be done inside the aircraft and meals turned to be pre-made in order to serve the growing number of passengers.

Dishes made to measurements. Food has to be massively and consistently prepared beforehand in the airline catering kitchens. Dishes are to be made according to specific measurements, in which standards for preparation and presentation are unified for the chefs to follow once the recipes are confirmed.

Provision of optional meals. Guests are given the freedom to choose whether they want in-flight meals when booking tickets. This is especially designed for cost-conscious guests, which creates a win-win situation as on one hand, guests can pay a cheaper overall price, and airlines can also offer a more competitive price as compared to other airline companies as the cost of food preparation is reduced.

Healthier meal options. The uptick in healthy eats is a prevailing trend in the travel and hospitality industry. There are two triggering factors for airlines to provide healthier meals. On one hand, there is increasing health concern from customers, and on the other hand, the more variety of options airlines provide for their customers, the more revenue reward they can get. Hence, airlines and airports are now offering a variety of healthy meal options ranging from low-fat snack boxes sold on a flight to low-calorie options in the airport, with the inclusion of vegetarian meals as well to suit the needs of their customers.

 In fact, a research from USA Today reveals that “15 major U.S. airports finds that 83% of restaurants have at least one vegetarian item on the menu — low in fat, high in fiber and good for your heart.” This indicates how major airports are now trying to provide healthier meal options in most of their restaurants.
Evaluation:
Before doing research, I never expected that airlines and airports will face so many challenges and obstacles in providing Food and Beverage services. Now that I learnt more about their operations, I can understand why airport meals may taste blend, or why they always serve beans and carrots instead of regular vegetables.

Q1) The Unique Features of Services

Challenge to please guest and client


Provide managed service is different with running a restaurant, as a managed service provider, we don't only deal with the guests who enjoy the food and beverage, but also need to deal with the client who own the place where we provide our services.

As clients in different industry may have different preference for the food and beverage provided by the managed service provider, we may need to adjust our service under the clients' requirements and regulations in order to build a long relationship with the client.

However, guests who actually enjoy the managed service we provide may have different view of the service requirement. Satisfying both clients and guests demand is a big challenge for a managed service provider.

For example, provide managed service for educational facilities, especially for primary schools and secondary schools, can be difficult. This is because the guests are mostly teenagers, who usually put taste of the food at top priority, while the clients, schools, may concern the nutrition value of the food instead.

Therefore, how to balance the aspects that guests and clients want from us is challenging.


Guests are captive clientele
For managed service providers, guests are usually captive clientele, which means they may not have other alternatives of dining.

This feature gives managed service providers an advantage in the business that they are able to charge a relatively higher price for their food and beverage. Also, as dining choice is limited, it is easy for the managed service provider or its client to advertise for their brand.

For example, managed service in theme parks usually provide food and beverage at higher price than in the market.





Also, managed service providers like Luncheon Star is famous within the guests who is captive in school and have no other alternatives.




Food service is not the primary business

For the clients of managed service providers, food and beverage is not their primary business, the aim of providing food and beverage for their guests is to enhance their experience of enjoying the primary business.

Therefore, quality of food and beverage may not be the biggest concern of the clients of managed service, and hence they may not be willing to input too much capital and resources in food and beverage area. This is one of the reason why they prefer using contract management to provide food and beverage in their business to reduce cost.

For example, in airline industry, food and beverage is not the major service they provide. Although it also provides food and beverage to enhance the quality of their service and to give customers a better experience, food and beverage provided tend to be simple, uniform and have limited choice.




Produce food in large quantity

Ability to handle large quantity of food production is important in managed service as there are often constant groups of guests to be served in a period of time.

Therefore, a large quantity of food is needed to be produced and delivered. Batch cooking is a common way to achieve large demand of food in short period of time.

For example, in military area, the dining periods of soldiers are uniform, which means that all of them are likely to dine at the same time, demanding a large quantity of food in a short period. This is one of the challenge for managed service providers.


Volume of business is consistent

As mentioned above, source and number of guests and their demand of food is relatively more predictable in managed service. With this advantage, the managed service provides are able to have better estimation and allocation of time and resources in their business so the operating cost can be reduced.

In order to have better estimation of demand of service, some managed service provider, for example service providers for educational facilities, may ask the guest to decide whether they want to have food and beverage and what kind of food and beverage they want in advance.




Conclusion
After the research for the unique features of managed services, we further explore different real life examples of the features. By studying the real life examples, we found out the benefits that a managed service provide may get and challenges they may face. For example the cost reduction due to better estimation and the difficulty to balance guests' and clients' demand. It gives us a better understanding in this chapter. 





Q3) Find out the updated trends about restaurant operations

 Technology advancement has led restaurant operation to a higher level. Tasks like suggestive selling, attracting customers and ordering are very different than before.


Social media for restaurant

   Front of the house of a restaurant is important for the purpose of attracting customer. Traditionally it will depend by the hostess, greeter, or the layout of the restaurant, which are inside the restaurant. However, due to technology advancement and the popularity of smart phone, the front of the house has extended outside the restaurant and go online.

 Nowadays, many customers will search for restaurants and upload their experience in a restaurant online. Therefore, it is very important for any restaurant to know how to do advertisement and branding with the use of social media.

  There are some online search engine for restaurant like OpenRice. From the restaurant point of view, it can be a great channel of free advertisement to increase exposure. However, comment and rating online can be negative and stop customers from coming. Therefore, to manage their online image, some restaurant will actively leave positive rate and comment online with hidden identity. Also, some restaurant may try to make use of the fame and user base of online restaurant search engine by cooperating with them, providing extra discount or special offer to customers.

  Also, with the use of smartphone and smartphone app, it is easy and popular to upload our everyday life on social networking platform(for example Instagram), contributing to the trend of sharing restaurant information online. Some users of the social networking platform may then open an account and sharing their experience of specific categories of content like restaurant. These kind of users can generate a large amount of other users who are interested in the same topic, and affecting many customers' choice on choosing restaurant. Therefore, some famous users may be invited by different restaurants to try their food and drinks and leave comment on their page in order to have cheap but effective advertisement.


  Moreover, instead of passively letting others leave comment and rate for their restaurant, many restaurants will actively open and manage their own page on social networking site like Facebook. As famous social networking sites have huge amount of user base and grant their users high degree of freedom in managing their own page, it is a very good advertising channel for any restaurant to use. They can freely publish their restaurant's information and special offers online in order to attract customers.







Technology advancement for the front of the house

  Ordering processing and suggestive selling  the front of the house is different with the use of technology.
The ordering and payment process can now be combined and performed by customer themselves.
  With devices like this, customers are able to order, pay and leave comments to the restaurant, without having any contact to anybody. Customer do not need to ask the waiter to come and take order or payment, and the restaurants can cut down cost on manpower as their customers can help themselves.
  This kind of devices had already be widely used by many restaurants, or partly applied in the operating process. For example, Festival Walk McDonald has applied an electronic ordering and payment machine. Customers can even self-customize the food they need. Attractive interface of the device often help restaurant do suggestive selling too.

Conclusion
Through the study of updated trends about restaurant operation, we learnt the importance of a restaurant operation manager to keep up with advanced technology. This is because we can turn the operation practice more effective and efficient with the application of technology, just like the advertisement with social networking sites and application of technology on front of the house tasks. Those new technology are not to be learnt in the textbook.

Q2) Research On How Restaurants Do Their Forecasting and Food Control Process


When running a business, restaurants will forecast the coming years’ sales and costs. After that, they will do adjustments in front of the house and back of the house accordingly. We will talk about how restaurant businesses do their forecasting and food cost control process.

Forecasting

Restaurants will use system to do the forecasting based on their past sales costs, and also some ratios (e.g. number of turns and average guest check). The forecast will help projecting how much profits they will earn in the coming years, and how much costs they will incur in the coming years. After that, they can start designing a plan for the coming years to earn more. The calculation of ‘number of turns’ and ‘average guest check’ will be shown as below:

Food Cost Control Process

After doing the forecast, restaurants will run for a period of time. Then controlling begins. They will first compare the forecasted sales and costs with the actual sales and costs, calculating the difference between them. After that, restaurants will make adjustments in the aspects that have difference between the forecasted value and actual value, especially the one with the most difference. The followings are some examples of how to control in the food aspect.

Brand Management:

Restaurants can replace expensive brands’ ingredients such as ketchup and vinegar to cheaper brands’ when preparing and making the dishes in the back of the house. Besides, the sauces that serve in the front of the house will remain the same, using the expensive brands’. In this way, costs can be saved. It’s because customers will not know which brands’ products are used to make the food. Customers may request more sauces, like ketchup. So, these sauces that are served in the front of the house need to remain using the expensive brands’. In this way, costs in purchasing sauces can be saved.

Menu and Size of Dishes Re-engineering:

In order to save cost, restaurants can cancel dishes that are the least popular and generate the least profits. Also, the size of the dishes can be smaller. There are some cases that the portion of the dishes is too large that customers can’t even finish it all. So, restaurants can make a smaller portion of dishes. In this way, costs can be saved. Not just the purchasing costs, but also other costs like gas and wastage.
Shopping Around:

In order to save most of the costs in a restaurant, we can start with the purchasing part. Restaurants can negotiation with the current suppliers to give them a cheaper price. Otherwise, they can switch to other cheaper suppliers to save the cost. According to National Restaurant Association, it stated that many operators are searching for better prices. Nearly nine out of 10 fine-dining operators shopped around for other suppliers in 2014, as did a majority of casual and family-dining operators. So, this is one of the ways to save most of the costs in a restaurant business.
Evaluation:
In lectures, we briefly knew that restaurants businesses need to do forecasting and food control process. After researching on related issue, I found that food control process consist of many things, which all are related to modifying to minimize the costs and building a better reputation. Although those measures in the process are similar, it is difficult to think of a good way to do control. In my opinion, doing control process also involve marketing thing. So, content of those corrective measures is difficult to think of as you may want to add gimmick into it.

Q1) Restaurant Operation: Choose One Topic about the Restaurant Operations You’re Interested and Explore More Information about It

          Purchasing is one of the most important part in the restaurant operations. It directly related to the operating cost and customer expectation of the restaurant. If the restaurant staff fails purchase the right quantity for different ingredients, the restaurant will face a shortage of ingredients and wastage of excess ingredients.  With insufficient ingredient, the restaurant will not be able to provide dishes stated on menu which disappoints their customers. For purchasing excess ingredients which are perishable, it leads to food wastage and increase in operating cost which lowers the restaurant’s profit.
        Just like what have mentioned in class, several staff should be assigned with different roles in purchasing and standard should be set to make procurement process an efficient one. However, what are the concrete steps for starting the purchasing procedure? Here are they:

Step 1: Determine a purchasing person or department
       The purchasing person or department is responsible for requesting quotation, making order, receiving, storing and issuing. There may be several people for buying all ingredients needed for a restaurant, but there should only be one person, the buyer who is responsible for doing the actual purchasing for ingredients. The buyer should have balanced communication skills (find out the need of different stakeholders in restaurant), good with math skills, computers skill (use software like SAP for recording every details in purchasing process) and product knowledge (choose the best ingredients and equipment for restaurant). Larger restaurant or organization will usually include a purchasing agent or team for handling the procurement issue while manager or chef will take this responsibility in a small restaurant.

Step 2: Determine the product specifications
          For the buyer to check whether the things they purchased match with what is needed by the restaurant, the product specification should be determined. As what have been mentioned in the lecture, product specification is about establishing standard for each product and also the method for payment and delivery which is very important for both the food supplier and the buyer to communicate the buyers’ purchase requirement. The buyers should consider different food characteristics such as grade, size, colour, origin, preservation method, intended use, etc. when they purchase various ingredients in order to produce up-to-standard dishes on menus. There is one specification called acceptable substitutions, which allows to vendor to provide alternative ingredients if the supplier do not have enough in stock. This allows the restaurant to have less risk even if the required food is not able to be provided. For clearly stating how to deliver food and how payment is done, the restaurant can better manage their supply chain and work with the food suppliers. Therefore, product specifications acts as a control in the purchasing and delivery process to make sure the ingredients with required and consistent quality are delivered in the right time.

Step 3: Estimate the quantity and frequency for each replenishment
                To understand which food suppliers provided with the best price, a restaurant usually send out request for proposal for suppliers to do bidding. It is just the same as the bidding what we have done in normal, the one provided the items with the best price will be chosen as supplier of the restaurant. However, the role of restaurant and suppliers may switch in a bidding process if the food supplier is hold some ingredients which is very special or rare (like the king tuna fish sold in Japan as what have mentioned in class).
         With the selected food supplier, the restaurant has to estimate the quantity and frequency for each replenishment by considering the demand, different ingredients perishability, the storage cost. With more shipments, the food freshness could be guaranteed and the cost for storing ingredients will be lowered. However, the transportation cost also increase. With less shipment, the situation will be vice versa. For ingredients which are non-perishable like sauces, oil, seasoning, etc., the purchase will be less frequent then fresh ingredients which are usually consumed each day.
          The restaurant always keep safety stock as replenishment needs time. Restaurant usually calculate the order amount by adding 5% to the additional required amount for a certain ingredient. Par stock level method is usually adopted to determine the replenishment quantity for the nonperishables.  It is an effective method for restaurant which has a cyclical menu to manage their purchasing. Par level means the stock level must be on hand at all times before the next order is delivered. As inventory are store outside the kitchen working area in the restaurant, there is an internal process call requisition for issuing ingredients to restaurant from store room. A par sheet is considered by storeroom manager to determine the amount of purchase for each item according to current stock level (original inventory-requisitioned amount) and par level. The staff may subtract the inventory in hand from the par level to check how much they should order.  This is called perpetual inventory generally.

              The above is an example of par sheet. The column ‘Do’ is the amount for replenishment. Take portioned fries as an example, there are 9 units of them in the inventory but the par level for that item is 25 unites. Therefore, 18 more units should be purchased in order to fulfill the operating need of the restaurant. However, as par level is only an estimation, the store manager usually adjust the purchase amount calculated from par sheet by considering the actual demand for particular items.
               If the ingredients are too much that it may be complicated and easy to make mistake if it is manually managed. Therefore, large restaurant usually make use of software like point-of-sales (POS) system to assist purchasing staff or department to check the amount of item used and stock level in the storeroom. The software may even automatically generate a purchase order for replenishment if they find out the inventory amount is lower than the safety stock level set in the software. Nevertheless, if alternatives replace part of the ingredient in the original dishes, or some ingredient is added and removed from the original recipe due to customization, the staff has to state the special changes in the POS system. If not, there will be a wrong calculation for inventory level of different items. Below is a sample interface for the POS system.

Step 4: Select the suitable method for purchasing based on needs
          Three needs of the restaurant has to be clarified, which are level of service needs, quality specifications needs and prime vendor relationship needs, before method for purchasing is determined. There are several types of common methods used by different restaurants in practicing their purchasing.
1.       Competitive quotes: the restaurant pick the food supplier who provide them with qualified input with lowest price under detailed specifications. It is usually adopted by small and independent restaurants.
2.       Standard order: there is regular replenishment for different item according to the use of par sheet. Restaurant use this method for bakery, coffee and diary product.
3.       Prime vendor:  this method refers to use a single food supplier to support majority of the restaurant input, which is mostly adopted by restaurants.
4.       Cost-plus: the restaurant source particular type of ingredients from a specific food supplier. Chain operations often use this practice.
5.       Sealed bids: The restaurant sign contract with a food supplier that the supplier has to provide ingredients at its price stated in contract even if the market price of ingredients fluctuate.
6.       Commissary: Consolidated quantity is purchased from a chosen food supplier. Chained and franchised restaurant always use this method.

Step 5: Find and select a vendor
         Finally, we come to the step of finding and selecting a vendor. The restaurant should list the potential vendor which can provide the required ingredients with different specified product characteristic and meet organization needs. Restaurant can evaluate different aspects (like Consistency in quality, delivery time, and labeling) of the food suppliers and rank them according to the priority that the restaurant would purchase ingredients from. One very special and important consideration is that managers should consider using Hazard Analysis Critical Control Point (HACCP) which is a system used to control risks and hazards when choosing food supplier. Only HACCP-approved food suppliers can share liability when the customers are sick or poisoned after consuming dishes produce from the ingredients supplied. After choosing the vendor, it is also very important to maintain good relationship with the selected supplier as well as monitoring the quality of ingredients supplied consistently. If the restaurant is able to choose a good partners in supplying food, the costs would probably be reduced, quality would be maintained customer expectation would be met.
       
Evaluation: 

         The key point of purchasing is covered in the lecture and here is just some more explanation and examples on what are the preparation and starting steps for doing the purchasing. After doing the research, I found that details that have to be determined and considered for purchasing is far more than I have expected. Through doing this research, I have more in-depth understanding on the purchasing of the restaurant operations.

Nowadays, taste and brand name is no longer the only gimmicks restaurants. Creativity is another gimmick. It means mixing food together. One of the examples will be mixing beverages. We will talk about the 3 recent trends in restaurant business.

Asian Ascendant
Asian food is becoming more popular these days. Not just in Hong Kong and Asian countries, but also in western countries like the USA and the UK. In the past, western customers like American only thought of Japanese sushi or Americanized Chinese food. But right now, they will think of other ethnic cuisines, such as Korean food and Vietnamese food. In the USA, they opened more Asian food restaurants now, from bubble tea to egg puffs (In Chinese, it is called ‘雞蛋仔’).


Options for Health
As we all know, people are concerning more about health. They tend to eat healthier than before, eating more salads, following the ‘3 low 1 high’ scheme, and so on. Some people eat less meat and more vegetables and some even become vegetarians to stay healthy. Therefore, restaurants redesign the menu, adding nutritional labeling into the menu, adding more dishes for vegetarians, and so on.




Guest Facing Technology
We cannot live without technology nowadays. Some restaurants are applying technology in serving customers. It is kind of a self-served business. In this way, restaurants can reduce the labor costs and enhance the efficiency in the operation part. Customers can use kiosks or tablets to order their food on their own. They can use their mobile to order food once the restaurant has developed the ordering system. Mobile apps can also help restaurant to have inventory management as customers can preorder in the app before they get in.



However, restaurants will use technologies like gadgets to promote and attract customers to come. For example, they will use digital signs, such as the big screen, to show the hot menu of today, the new dishes they have today, or what promotion they have in a particular period of time. Also, restaurants will send coupons and real-time messages to customers via mobile apps.

And last but not least, restaurants use technologies in reservation, allowing customers to reserve via mobile or online. This is convenient to customers to make reservation by just clicking and filling the basic information. Also, this helps restaurants to have a more systematic reservation.




What I have learnt?

In the lecture, we knew how to design a menu, what information should be put in the menu. After I researched for recent trends in restaurant business, I found that more restaurants are putting nutritional value into the menu. Also, using different cooking skills and creativity is more important these days. For example, how to apply molecular gastronomy into dishes, and how to mix things together to produce another beverage out. I have learnt a lot in this lecture.
